White Chocolate Cheesecake (baked)


This is a lovely refreshing cheesecake. It has the richness and sweetness of white chocolate, but that fresh kick of passion fruit just balances it out beautifully. Especially suited for your spring or summer celebrations!









Ingredients cheesecake:
300 gr    cream cheese
250 gr    white chocolate
125 gr    sour cream (small cup)
2             eggs
1 tbsp   flour
50 gr     sugar (optional)


Ingredients base
250 gr    self raising flour
125 gr    sugar
125 gr    butter at room temperature
1 tbsp   lemon juice ( ½ lemon)
To make base, mix lemon juice into butter, add sugar and then slowly mix in flour. Mix until well combined then kneed into dough. It will stay somewhat grainy but don't worry about it.
Put in plastic foil and place in fridge for at least 30 min.
After refrigerating either roll out dough in to round disc and cover cake-tin or simply press it into place. It needs to be about 3-5mm thick. Refrigerate again. 

Break white chocolate into bowl and heat over pan with water (au baine marie) until completely dissolved. Place cream cheese, flour and vanilla (and sugar if you like things sweet) in a bowl and mix at medium speed until smooth. Add chocolate and mix. Add eggs one at a time, mix at low speed. Lastly add sour cream and mix well. Pour batter into cake tin and place in oven. To prevent cracking place another cake tin with water on the bottom of oven.
Bake at 180 C* for 30-40 minutes. Leave to cool on wire rack before refrigerating. 
After cooling your cake will probably have a little rise around the edges (as in picture) if it bothers you you can cut it of. Since you will add a topping the cuts will be invisible. But you can also use the rise as a shell to keep your topping inside. It all comes down to how you prefer it, but I usually just leave it.

You can add a store bought topping or make your own. I made a passion fruit topping and loved it!
A yummie and easy topping is to spread or pipe some fluffy whipped cream on cake and then add some fresh raspberry's, very easy on the eyes as well!
